Granola

Once recipe I am regularly asked to share is for granola, a tasty American breakfast cereal. I’ve eaten some of this most days I’ve lived and I’m not bored of it yet :-) You can get the ingredients in any healthfood store for a good price or else pay a ridiculous price by shopping at Te$co or the like.

Mix in large bowl:

  • 5 cup jumbo oats
  • 1 cup desiccated coconut
  • 1 cup sunflower seeds
  • 1 cup sesame seeds
  • 1 cup dried milk powder
  • 1 cup soya flour
  • 1 cup wheatgerm
  • 1 cup roughly chopped brazil nuts

Add and stir thoroughly:

  • 1 cup sunflower or vegetable oil

Add and stir thoroughly:

  • 1 cup honey

Bake on two ungreased baking sheets in pre-heated oven at 120°C/250°F for one hour or until beginning to brown off (if, when it has cooled, it is crunchy rather than chewy then you have probably overbaked it). Scrape off onto greaseproof paper to cool. Store in a sealed container.

Add:

  • 1 cup sultanas or other dried fruit (optional)

Serve with milk or yoghurt; goes well with sliced banana or fresh berries.

Variation
Substitute ¾ cup maple syrup for ½ cup of the honey, and use pecans or walnuts instead of brazil nuts.
